Tortilla Española

    Prepare the Potatoes and Onion

    Peel the potatoes and slice them thinly. Chop the onion into small pieces.

    Cook the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the sliced potatoes and onion. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are tender but not browned. Add salt and stir well.

    Beat the Eggs

    In a large bowl, crack the eggs and whisk them until well combined. Season with a pinch of salt.

    Combine and Cook

    Once the potatoes and onion are cooked, drain excess oil and add them to the beaten eggs. Mix well. Return the skillet to medium heat and pour the mixture back into the skillet. Cook for about 5-7 minutes until the edges start to set.

    Flip the Tortilla

    To flip the tortilla, place a large plate over the skillet, invert it, and slide the tortilla back into the skillet to cook the other side. Cook for another 5-7 minutes.

    Once cooked through, slide the tortilla onto a serving plate and let it cool slightly before slicing into wedges.

    Prepare the Garlic Crostini

    Slice the baguette into thin slices. In a small bowl, mix the softened butter with minced garlic. Spread the garlic butter mixture on one side of each bread slice.

    Toast the Crostini

    Preheat the oven to 375°F (190°C). Place the buttered bread slices on a baking sheet and toast in the oven for about 10-12 minutes, or until golden brown.

    On a large serving platter, arrange the tortilla slices, Marcona almonds, Spanish olives, Jamón Serrano, Spanish chorizo, Manchego cheese (sliced), and the garlic crostini.
