    Prepare the marinade

    In a mixing bowl, combine cumin, smoked paprika, chili powder, minced garlic, olive oil, salt, and black pepper. Mix until well blended.

    Marinate the pork

    Cut the pork tenderloin into bite-sized cubes. Add the pork to the marinade and ensure all pieces are well coated. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight for more flavor.

    Prepare the skewers

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Once marinated, thread the pork cubes onto the skewers.

    Grill the skewers

    Preheat a grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally until the pork is cooked through and has nice grill marks.

For the Garlic Aioli

    Make the aioli

    In a bowl, whisk together minced garlic, egg yolk, lemon juice, and mustard until smooth.

    Emulsify the aioli

    Slowly drizzle in the olive oil while continuously whisking until the mixture thickens and emulsifies. Adjust salt to taste.
