Potatoes Preparation

    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Peel the Russet potatoes and cut them into 1-inch cubes. Rinse them in cold water to remove excess starch.

    Dry and Season

    Spread the potato cubes on a clean kitchen towel and pat them dry. In a large mixing bowl, toss the potatoes with olive oil, salt, and black pepper until evenly coated.

    Roast the Potatoes

    Arrange the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for 30-35 minutes, or until they are golden brown and crispy, flipping halfway through.

Spicy Tomato Sauce Preparation

    Prepare the Sauce

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Combine Ingredients

    Stir in the tomato sauce, smoked paprika, chili powder, salt, sugar, red wine vinegar, and black pepper. Mix well to combine all the ingredients.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer for about 10-15 minutes, stirring occasionally, until it thickens slightly.
