    Prepare Ingredients

    Gather all ingredients and chop the vegetables as specified. Rinse the Bomba rice under cold water and drain.

Cooking

    Cook Chicken and Chorizo

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on both sides, about 5-7 minutes. Remove the chicken from the pan and set aside.

    Sauté Vegetables

    In the same pan, add the diced onion, garlic, and red bell pepper. Sauté for about 3-4 minutes until they start to soften.

    Add Chorizo and Spices

    Add the sliced chorizo to the pan and cook for another 3 minutes. Stir in the diced tomatoes, paprika, saffron, salt, and black pepper.

    Incorporate Rice

    Add the rinsed Bomba rice to the pan and stir to combine with the vegetables and spices.

    Add Stock

    Pour in the fish stock and bring to a simmer. Return the cooked chicken to the pan, placing it on top of the rice.

    Cook Paella

    Reduce the heat to low, cover, and let cook for about 15 minutes without stirring. After 15 minutes, add the shrimp and mussels evenly over the top and cover again. Cook for an additional 5-7 minutes until the seafood is cooked and the rice has absorbed the liquid.

    Finish and Serve

    Once cooked, remove the pan from heat and let it sit covered for 5 minutes. Serve with lemon wedges and sprinkle with chopped parsley.
