Main Ingredient

Cabrales Blue Cheese Butter

Crispy Onion Streamers

Method

Preparing the Cabrales Blue Cheese Butter

  1. 1

    Make the Blue Cheese Butter

In a mixing bowl, combine the unsalted butter (softened at room temperature) and Spanish Cabrales blue cheese. Mash together until well blended.

  2. 2

    Add Flavor

Finely chop the garlic and fresh parsley. Add the chopped garlic, parsley, and black pepper to the butter mixture. Mix until evenly combined.

  3. 3

    Chill

Transfer the blue cheese butter mixture onto a piece of parchment paper and shape it into a log. Wrap tightly and refrigerate until firm, about 30 minutes.

Preparing the Crispy Onion Streamers

  1. 4

    Slice the Onion

Peel and slice the onion into thin rings.

  2. 5

    Prepare the Batter

In a bowl, mix together the all-purpose flour, cornstarch, baking powder, and salt.

  3. 6

    Make the Batter

Gradually whisk in cold water to the dry ingredients until smooth. The batter should be thick yet pourable.

  4. 7

    Fry the Onions

In a deep frying pan or pot, heat vegetable oil over medium-high heat. Dip the onion rings into the batter, allowing excess to drip off, and fry in batches until golden brown and crispy. Remove and drain on paper towels.

Cooking the Kobe Beef

  1. 8

    Preheat the Grill

Preheat your grill to high heat.

  2. 9

    Season the Beef

Season the Kobe beef steaks generously with salt and pepper on both sides.

  3. 10

    Grill the Steaks

Place the steaks on the grill and cook for about 4-5 minutes on each side for medium rare, or until desired doneness is reached.

  4. 11

    Rest the Steaks

Remove the steaks from the grill and let them rest for 5 minutes before serving.

Serving

  1. 12

    Plate the Dish

Serve the grilled Kobe beef steaks topped with a generous slice of Cabrales blue cheese butter. Garnish with crispy onion streamers around the plate.
