Preparation

    Prepare the Apples

    Wash the fresh apples thoroughly under running water. Core and chop the apples into quarters, leaving the skins on for added flavor.

    Combine Ingredients

    In a large pot, combine the chopped apples, water, sugar, cinnamon sticks, cloves, nutmeg, and lemon juice. Stir well to mix all the ingredients.

Cooking

    Simmer the Mixture

    Place the pot on the stove over medium heat. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 45 minutes, stirring occasionally.

    Mash the Apples

    After 45 minutes, use a potato masher or a wooden spoon to mash the apples down to release their juices. Make sure to break down the apples as much as possible.

    Strain the Cider

    Once the apples are mashed, place a fine-mesh strainer or cheesecloth over a large bowl. Pour the apple mixture into the strainer to separate the liquid from the solids. Press down with a spoon to extract as much juice as possible.

Serving

    Pour the freshly strained cider into mugs or glasses. If desired, garnish with fresh apple slices, a sprinkle of cinnamon powder, or a whole star anise for added flavor.
