    Prepare the platter

    In a serving dish, arrange the mixed olives, slices of Manchego cheese, and chorizo evenly. Serve at room temperature.

Patatas Bravas

    Fry the potatoes

    In a large pot, heat olive oil over medium heat. Add the cubed potatoes, season with salt, and cook until golden and crispy, about 15-20 minutes.

    Season the potatoes

    Once the potatoes are cooked, sprinkle with smoked paprika and garlic powder. Toss to combine and cook for an additional 2 minutes.

    Serve

    Transfer the patatas bravas to a serving dish and serve hot with sour cream or aioli on the side.

Gambas al Ajillo

    Sauté the garlic

    In a skillet, heat olive oil over medium heat. Add sliced garlic and sauté until fragrant, about 1-2 minutes.
