Prepare the Dough
In a medium saucepan, combine water, unsalted butter, 1 tablespoon of sugar, and salt. Bring to a boil over medium heat.

Once boiling, remove from heat and stir in the flour until the mixture pulls away from the sides of the pan and forms a ball.

Allow to cool for about 10 minutes, then add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Pipe the Churros
Transfer the dough into a piping bag fitted with a star tip. Pipe 4-6 inch long strips of dough into the hot oil, cutting with scissors to release.

Fry until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

Coat with Sugar
In a shallow dish, combine 1 cup of granulated sugar with 2 teaspoons of ground cinnamon. Roll the fried churros in the mixture until well coated.

Make the Chocolate Sauce
In a small saucepan, heat heavy cream over medium heat until it starts to simmer.

Remove from heat and add semi-sweet chocolate chips and vanilla extract. Stir until the chocolate is fully melted and the sauce is smooth.
