Method

Preparing the Ahi Tuna

  1. 1

    Step 1: Prepare the Tuna

Season both sides of the Ahi Tuna steaks with salt and black pepper.

  2. 2

Step 2: Coat with Sesame Seeds

Spread the sesame seeds on a plate and press each tuna steak into the seeds to coat both sides evenly.

  3. 3

    Step 3: Sear the Tuna

Heat olive oil in a skillet over medium-high heat. Once hot, add the sesame-coated tuna steaks and sear for about 1-2 minutes on each side, until the outside is golden brown but the inside remains rare. Remove from heat and let rest.

Making the Piquillo Pepper Sherry Coulis

  1. 4

    Step 1: Blend the Ingredients

In a blender, combine the piquillo peppers, sherry vinegar, olive oil, minced garlic, salt, and pepper. Puree until smooth.

  2. 5

    Step 2: Adjust Seasoning

Taste the coulis and adjust seasoning with additional salt and pepper if necessary.

Plating the Dish

  1. 6

    Step 1: Prepare the Plate

On a serving plate, spoon some of the piquillo pepper sherry coulis in the center.

  2. 7

Step 2: Add Tuna and Garnish

Slice the seared Ahi Tuna steaks into thin strips and arrange them on top of the coulis. Top with fresh arugula and drizzle with balsamic reduction.
