    Prepare the Olives

    Rinse the green, black, Kalamata, and Castelvetrano olives under cold water to remove excess brine. Pat them dry with a paper towel.

    Crush the Garlic

    Peel the garlic cloves and lightly crush them with the flat side of a knife. This will help release their flavor into the marinade.

Marinade

    Mix the Marinade

    In a bowl, combine the extra virgin olive oil, red wine vinegar, crushed garlic, fresh rosemary, dried oregano, red pepper flakes, salt, and black pepper. Whisk together until well blended.

    Combine Olives and Marinade

    In a large mixing bowl or a jar, add the rinsed olives and pour the marinade over them. Toss or shake gently to ensure all olives are coated with the marinade.

Storage

    Refrigerate

    Cover the bowl or seal the jar and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.

    Serve

    Bring the olives to room temperature before serving. They can be served as a tapas dish, on a charcuterie board, or as a snack.
