Prepare and toast ciabatta
Preheat the oven to 200°C (390°F). Slice the ciabatta into 4 thick slices (~1–1.5 inches each). Lightly brush both sides of each slice with olive oil (and a thin smear of butter if using). Arrange on a baking sheet and toast in the oven 6–8 minutes, flipping halfway, until golden and crisp at the edges. Remove and keep warm.

Cook onions slowly
While the bread toasts, heat 1 tbsp butter and 1 tsp olive oil in a medium skillet over medium-low heat. Add the thinly sliced onion, 1 tsp sugar and 1 tsp salt. Cook, stirring occasionally, lowering heat if they begin to brown too quickly. Continue 18–25 minutes until the onions are soft, deeply golden and sweet. If the pan gets too dry, add a splash of water. In the last minute, stir in 1 tsp balsamic vinegar (optional) to deglaze and deepen flavor. Remove from pan and set aside.

Sauté mushrooms
In the same or a separate large skillet, heat 1 tbsp olive oil and 1 tbsp butter over medium-high heat until foaming. Add the sliced mushrooms in an even layer (work in batches if necessary to avoid steaming). Let them sear undisturbed for 2–3 minutes, then stir. Add the minced garlic and thyme, season with 1 tsp salt and 1 tsp black pepper. Continue cooking 4–6 minutes until mushrooms are golden and any liquid has evaporated. Finish with 1 tsp fresh lemon juice (optional) and adjust seasoning to taste. Remove from heat.

Add brie and warm briefly
Slice or tear the brie into pieces and place atop the mushroom layer, distributing roughly 37–38 g (about 1–2 slices or pieces) per toast. Return the assembled toasts to the oven at 180°C (350°F) for 4–6 minutes, just until the brie softens and begins to melt but the bread remains crisp. Alternatively, use a kitchen torch to warm the brie for 30–60 seconds.
