    Form Patties

    Divide ground beef into two equal 8 oz portions. Gently form each portion into a patty about 3/4–1 inch thick and a bit wider than the buns (they will shrink while cooking). Handle the meat lightly — do not overwork. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.

    Season

    Season both sides of the patties with kosher salt and freshly ground black pepper just before cooking.

    Toast Buns

    Heat a skillet or griddle over medium heat. Spread softened butter on the cut sides of the buns. Toast buttered sides on the skillet until golden, 1–2 minutes. Remove and keep warm.

    Cook Patties

    Preheat a heavy skillet (cast-iron preferred) or grill to medium-high. Add a light coat of oil if using a skillet. Place patties on the hot surface and cook without moving for 3–4 minutes to form a good sear. Flip and cook 3–4 minutes more for medium (internal ~140–145°F). For medium-well, cook 1–2 minutes longer. In the last 1–2 minutes of cooking, place slices of brie on each patty so the cheese begins to melt; cover the pan briefly with a lid or foil to help the cheese soften.

    Make Avocado Spread

    While patties cook, halve and pit the avocado. Scoop flesh into a bowl and mash lightly with a fork. Add lemon juice to prevent browning and season with a pinch of salt. Combine mayonnaise and Dijon mustard in a small bowl and spread on the bottom bun.

    Assemble

    Place a bottom bun spread with mayo-mustard. Add the cooked beef patty topped with melted brie, then a generous spoonful of mashed avocado, and finally the sautéed onions (see next section). Cap with the toasted top bun. Serve immediately with your chosen side.

Sautéed Onions

    Heat a skillet over medium-low heat and add 1 tablespoon olive oil and 1 tablespoon butter. When butter melts, add the thinly sliced onion and stir to coat.

    Cook onions slowly, stirring occasionally, for 12–18 minutes until softened and starting to caramelize. If you want them sweeter and more deeply browned, add 1 teaspoon sugar about halfway through and continue cooking an additional 5–8 minutes. Season with 1 teaspoon salt and 1/2 teaspoon freshly ground black pepper.

    In the last minute of cooking, stir in 1 teaspoon balsamic vinegar (optional) to deglaze and add depth. Remove from heat and keep warm until assembly.

Sides (choose one)

    French Fries (oven or fryer)

    For frozen fries: cook according to package directions until crisp and golden. For fresh fries: preheat oil in a deep fryer or pot to 325°F for first fry; blanch cut potatoes 3–4 minutes until tender but not colored, remove and drain, then raise oil to 375°F and fry until golden, 2–3 minutes. Season immediately with 1/2 teaspoon salt. Serve alongside the burger.

    Truffle Fries (optional)

    Cook fries as above. While hot, toss with 1 teaspoon truffle oil and 2 tablespoons grated Parmesan. Taste and add a light pinch of salt if needed. Serve immediately.

    Sautéed Vegetables (alternative)

    Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add 12 oz mixed vegetables (zucchini, bell pepper, green beans) cut into uniform pieces. Sauté, stirring often, until tender-crisp and lightly browned, 6–8 minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Serve warm with the burger for a lighter option.
