    Prepare the Glaze

    In a small bowl, combine the rocoto paste, miso paste, honey, minced garlic, and grated ginger. Mix well until smooth. Set aside.

    Season the Salmon

    Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

    Heat the Oil

    In a large skillet, heat olive oil over medium-high heat until shimmering.

    Sear the Salmon

    Place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes without moving them, until the skin is crispy. Carefully flip the fillets and cook for another 3-4 minutes, or until the salmon is cooked through. Remove from the skillet and brush with the rocoto-miso glaze.

    Stir-Fry the Vegetables

    In the same skillet, add the broccoli, bell pepper, and carrot. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp. Add soy sauce and toss to combine, cooking for an additional 1-2 minutes.

    Serve

    Serve the seared salmon on a plate with the stir-fry vegetables on the side. Drizzle any remaining rocoto-miso glaze over the salmon and sprinkle with sesame seeds.
