Tortita Preparation

Prepare the Crab Mousse

In a mixing bowl, combine the red crab meat, cream cheese, mayonnaise, lemon juice, salt, and black pepper. Mix until smooth and well combined.

Chill the Mousse

Cover the mixing bowl with plastic wrap and refrigerate the crab mousse for at least 30 minutes to allow the flavors to meld.

Make the Corn Fritters Batter

In another bowl, mix the cornmeal, egg, baking powder, and water until you achieve a smooth batter. Let it sit for a few minutes.

Fry the Corn Fritters

Heat oil in a frying pan over medium heat. Once hot, drop spoonfuls of the corn fritter batter into the pan. Fry until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare the Avocado

Cut the avocado in half, remove the pit, and scoop the flesh out. Slice thinly or mash it, depending on your preference.

Assemble the Tortita

On each corn fritter, place a generous dollop of the chilled crab mousse, a few slices or a smear of avocado, and top with a small amount of Osetra caviar.

Serve

Serve the Tortitas immediately as an appetizer or a main dish, garnished with fresh herbs if desired.
