Salad Preparation

Prepare Quinoa
Rinse the quinoa under cold water to remove any bitterness. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it cool.

Prepare Tomatoes
While the quinoa is cooking, wash the heirloom cherry tomatoes. Cut them in half or quarters depending on their size. Set aside.

Make Sweet Basil Dressing
In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, salt, and black pepper. Chop the sweet basil finely and mix it into the dressing.

Assemble Salad
In a large bowl, combine the cooled quinoa, baby greens, and heirloom cherry tomatoes. Drizzle the sweet basil dressing over the salad and toss gently to combine.

Add Burrata
Tear the burrata cheese into pieces and arrange it on top of the salad. Serve immediately, garnishing with additional basil if desired.
