    Rinse Quinoa

    Rinse 1 cup of quinoa under cold water in a fine-mesh strainer. This removes the natural coating called saponin, which can make quinoa taste bitter.

    Cook Quinoa

    In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over high heat, then reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the water is absorbed and the quinoa is fluffy.

    Sauté Vegetables

    While the quinoa is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion, and cook until translucent, about 3-5 minutes.

    Add the minced garlic, chopped red bell pepper, and diced carrot to the skillet. Sauté for another 5 minutes until the vegetables are tender.

    Stir in 1 cup of frozen peas, salt, black pepper, and cumin powder. Cook for an additional 3-4 minutes until the peas are heated through.

    Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Mix well to combine.

    Remove from heat, stir in 2 tablespoons of lemon juice and 0.5 cups of chopped fresh cilantro. Adjust seasoning to taste and serve warm.
