Steak Preparation

    Marinate the Steak

    In a bowl, combine the Wagyu skirt steak with lomo saltado marinade, salt, and black pepper. Ensure the steak is well-coated and let it marinate for at least 30 minutes.

    Torch the Steak

    After marinating, use a torch to lightly sear the surface of the skirt steak until it is caramelized but still rare inside. Allow the steak to rest for 5 minutes before slicing.

Nigiri Rice

    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

    Season the Rice

    Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour over the warm rice and gently fold to combine without mashing the grains.

Assembly

    Assemble Nigiri

    With wet hands, take a small amount of sushi rice and shape it into an oval. Place a slice of the torched Wagyu skirt steak on top of the rice.

    Garnish

    Top the nigiri with chopped cilantro, sliced scallions, and a drizzle of lemon juice for added flavor. Serve immediately.
