Preparation of Ahi Tuna

Dice the Tuna
Using a sharp knife, cut the ahi tuna into small, uniform cubes, about 1 cm in size.

Marinate the Tuna
In a bowl, combine the diced tuna with soy sauce. Let it marinate in the refrigerator for 15-20 minutes.

Prepare the Crackers
Place the tapioca crackers on a clean surface. If desired, warm them slightly in the oven for a few minutes to make them crispier.

Assemble Ingredients
On each tapioca cracker, place a slice of avocado, followed by a spoonful of marinated ahi tuna on top.

Add Smoked Cebichera
Gently add a small piece of smoked cebichera on top of the tuna for added flavor.

Sprinkle microgreens and sesame seeds on top of each nigiri for garnish.
