LOMO SALTADO

    Prepare the Ingredients

    Start by slicing the beef tenderloin into thin strips. Dice the tomatoes and onion, and mince the garlic cloves.

    Cook the Rice with Corn

    In a pot, cook 2 cups of rice according to package instructions. Add corn kernels to the rice during the last 5 minutes of cooking. Once done, fluff with a fork and set aside.

    Stir-Fry the Beef

    Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. Add the beef strips and stir-fry for about 3-4 minutes until browned. Remove the beef and set aside.

    Sauté Vegetables

    In the same wok, add the remaining tablespoon of vegetable oil. Add the minced garlic, diced onion, and sauté for 2-3 minutes until the onion is translucent.

    Add Tomatoes and Season

    Stir in the diced tomatoes and cook for another 2 minutes. Add the beef back into the wok along with soy sauce, vinegar, salt, and pepper. Stir everything together and cook for another 2 minutes.

    Finish and Serve

    Remove from heat and stir in chopped cilantro. Serve Lomo Saltado hot alongside the arroz con choclo.
