Brownie Base

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper.

Melt Butter and Mix Sugars
In a medium saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and stir in granulated sugar and brown sugar until well combined.

Combine Dry Ingredients
In a separate bowl, mix together flour, cocoa powder, and salt.

Combine Wet and Dry Ingredients
Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Fold in the dark chocolate chips.

Bake Brownie Base
Pour the brownie batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.

Cool the Brownies
Once baked, remove from the oven and allow to cool completely in the pan before adding the lúcuma mousse.
Lúcuma Mousse

Prepare Gelatin
In a small bowl, combine gelatin powder with water and let it sit for about 5 minutes to bloom.

Whip Cream
In a large mixing bowl, beat the heavy cream until soft peaks form. Gradually add powdered sugar and continue to beat until stiff peaks form.

Mix Lúcuma Puree
In another bowl, whisk the lúcuma puree until smooth. Microwave the bloomed gelatin for about 10 seconds until melted and stir it into the lúcuma puree.

Combine Mousse
Gently fold the whipped cream into the lúcuma mixture until fully incorporated. Spread the mousse over the cooled brownies.

Chill Mousse
Refrigerate the assembled brownies with the mousse for at least 2 hours to set.
Salted Caramel Sauce

Make Caramel
In a saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns a deep amber color.

Add Cream and Butter
Carefully add the heavy cream and unsalted butter to the caramel, whisking until smooth. Bring to a gentle boil.

Add Sea Salt
Remove from heat and stir in the sea salt. Allow the caramel to cool slightly before drizzling over the chilled lúcuma mousse brownies.
