    Prepare the Marinade

    In a small bowl, mix the minced Peruvian chilis, curry powder, salt, and black pepper to create a marinade.

    Marinate the Fish

    Rub the marinade mixture over the Mahi-Mahi fillets, ensuring they are evenly coated. Let them marinate in the refrigerator for at least 30 minutes.

    Prepare the Herbs

    While the fish is marinating, chop the fresh cilantro and mint. Set aside for garnish.

    Cook the Fish

    Heat the vegetable oil in a skillet over medium heat. Once hot, place the marinated Mahi-Mahi fillets in the skillet and cook for 4-5 minutes on each side, or until the fish is golden brown and cooked through.

    Serve

    Remove the fish from the skillet and let it rest for a minute. Serve the Mahi-Mahi topped with fresh cilantro and mint, and drizzle sweet chili sauce over the top. Enjoy with sweet chili pickles on the side.
