Cebiche Preparation

    Prepare the Fish

    Cut the fresh fish into small, bite-sized cubes and place them in a glass or ceramic bowl.

    Marinate the Fish

    Pour the lime juice over the fish cubes, ensuring they are well coated. Add salt to taste. Cover the bowl and let it marinate in the refrigerator for about 10-15 minutes. The fish will turn opaque as it 'cooks' in the lime juice.

    After marinating, add the thinly sliced red onions, finely chopped habanero pepper (adjust quantity to your heat preference), and chopped cilantro to the marinated fish. Mix gently to combine.

    Serve the cebiche in bowls, garnished with cooked choclo, sliced sweet potatoes, and cancha on the side. Enjoy immediately for the freshest taste.
