Method

Preparing Causa Base

    Boil the Potatoes

    Peel the yellow potatoes and place them in a pot of boiling salted water. Cook until fork-tender, about 20 minutes.

    Mash the Potatoes

    Drain the potatoes and mash them in a large bowl until smooth.

    Mix Ingredients

    Add lime juice, ají amarillo paste, salt, and olive oil to the mashed potatoes. Mix well until thoroughly combined.

    Chill the Mixture

    Cover the mashed potato mixture and refrigerate for at least 30 minutes to firm up.

Preparing Vegetable Toppings

    Prepare Artichokes

    If using fresh artichokes, steam them until tender, then slice. If using canned, simply drain and slice.

    Blanch Asparagus

    Bring a pot of water to a boil, add the asparagus pieces, and blanch for 2-3 minutes. Drain and cool in ice water.

    Roast Beets

    Wrap beets in foil and roast in the oven at 200°C (400°F) for about 45 minutes or until tender. Allow to cool, then dice.

    Slice Avocado

    Cut the avocado in half, remove the pit, and slice the flesh into thin pieces.

    Dice Tomato

    Wash the tomato and dice it into small cubes.

Preparing Beet and Olive Sauce

    Combine Sauce Ingredients

    In a bowl, mix diced beetroot, chopped black olives, minced garlic, olive oil, salt, and pepper.

    Blend Mixture

    Use a blender or food processor to blend the sauce until smooth. Adjust seasoning if necessary.

Assembling Causa Garden

    Layer Causa

    In a serving dish, spread half of the causa base mixture to form a layer.

    Add Toppings

    Layer the sliced artichokes, blanched asparagus, diced beets, avocado slices, and tomato cubes on top of the first layer.

  3. 14

    Finish with Sauce

    Spread the remaining causa mixture on top of the toppings, then drizzle with the beet and olive sauce.

  4. 15

    Serve

    Chill for an additional 15 minutes before slicing and serving.
