    Prepare strawberries

    Wash the strawberries thoroughly, remove the stems, and quarter them. Reserve two thin slices for garnish.

    Sweeten strawberries (optional step for deeper flavor)

    Place the quartered strawberries in a small bowl with the granulated sugar and the optional lemon juice. Stir and let macerate for 5–10 minutes to draw out juices. If using honey instead of part of the sugar, add it now and mix until dissolved.

    Blend

    Add the macerated strawberries (with any released juice) to a blender. Add the plain yogurt, milk (start with 1/4 cup; add more later if you prefer thinner), ice cubes, and ground cardamom if using. Blend on high for 30–60 seconds until completely smooth and frothy. Taste and adjust sweetness: add up to 1 tablespoon more sugar or 1 teaspoon more honey if needed, and blend briefly to incorporate.

    Adjust consistency and chill

    If the lassi is too thick, add additional milk 1 tablespoon at a time and pulse until you reach the desired pourable consistency. For a colder drink, add 1–2 extra ice cubes and blend briefly.

    Serve

    Divide the lassi between two tall glasses (or one large glass). Garnish each with a reserved strawberry slice and two mint leaves. Optionally dust the top with a very small pinch of ground cardamom.

    Storage

    Serve immediately for best texture and flavor. Leftover lassi can be refrigerated in a sealed container for up to 24 hours; stir or re-blend before serving as separation may occur.
