    Prep the spices

    Lightly crush the cardamom pods, cloves and peppercorns with the flat side of a knife or a mortar and pestle. If using fennel seeds, lightly crush them as well. Thinly slice or roughly crush the fresh ginger.

    Toast (optional)

    In a small dry saucepan over medium heat, add the crushed cardamom, cloves, peppercorns, fennel (if using) and the cinnamon stick. Toast for 30–45 seconds until fragrant, stirring constantly to avoid burning. This step intensifies flavor but can be skipped if short on time.

    Simmer water with spices

    Add 2 cups of water to the saucepan with the toasted spices (or add spices to cold water if you skipped toasting). Bring to a gentle boil over medium-high heat, then reduce to a simmer. Add the sliced/crushed ginger and star anise (if using). Let simmer, uncovered, for 5 minutes to extract flavors.

    Add tea

    After 5 minutes of simmering the spices, add 2 teaspoons of loose black tea leaves to the simmering spiced water. Stir gently and continue to simmer for another 2–3 minutes for a strong brew (reduce to 1–2 minutes for a lighter cup).

    Add milk and sugar

    Pour in 1 cup of whole milk and add 2 teaspoons of sugar (or to taste). Increase heat and bring the mixture just to a gentle boil (watch carefully to avoid boiling over). Once it reaches a near-boil, reduce heat and let it simmer for 1–2 minutes so the milk takes on the spice and tea flavors.

    Strain and serve

    Remove the pan from heat. Using a fine mesh strainer or tea strainer, strain the chai into cups, catching the tea leaves and spice bits. Taste and adjust sweetness if desired. Serve hot.

    Refills

    For up to 2 refills: To make a refill from the same brewed base, reheat the strained chai gently and add 1/4 to 1/2 cup additional hot water (or milk if you prefer richer refills). You may add 1/2 teaspoon more sugar per refill if needed. Avoid prolonged boiling of milk during refills to prevent scorching; gently warm instead. Each refill should be heated to near-boil for 1 minute to refresh the aroma.
