    Chill glass

    Place an old-fashioned glass in the freezer or fill it with ice water to chill while you prepare the cocktail (2–3 minutes). This ensures the drink stays cooler longer without over-dilution.

    Combine ingredients

    In a mixing glass add 2 oz bourbon, 0.5 oz aged rum (if using), 0.5 oz sweet vermouth, 0.25 oz Amaro, 0.25 oz simple syrup, 2 dashes Angostura bitters, and 1 dash orange bitters.

    Add ice and stir

    Fill the mixing glass with plenty of large ice and stir smoothly for 30–45 seconds (about 20–30 full strokes). The goal is to chill the mixture and dilute roughly 20–25% for a balanced mouthfeel.

    Prepare serving glass

    Discard the ice or water from the chilled old-fashioned glass. Add a single large ice cube (or a few large cubes) to the glass to minimize further dilution.

    Strain and finish

    Using a Hawthorne or julep strainer, strain the chilled cocktail into the prepared old-fashioned glass over the large ice cube.

    Garnish

    Express the oils of an orange peel over the surface by holding the peel skin-side down about 3–4 inches above the drink and giving it a quick pinch. Rub the peel's rim around the glass, then drop the peel into the drink as a garnish.

    Serve immediately. The Old Aggie is best enjoyed slowly, sipping to appreciate the layered flavors from the bourbon, fortified wine, and Amaro.
