Method

Cocktail

  1. 1

    Prepare glass

Fill a highball or Collins glass with ice for chilling while you mix the cocktail, or set aside a separate glass with fresh ice for serving.

  2. 2

    Build cocktail

Add 2 oz Bacardi white rum, 4 oz pineapple juice, 0.5 oz fresh lime juice, and 0.25 oz simple syrup (if you prefer slightly sweeter) into a cocktail shaker.

  3. 3

    Add ice and shake

Add about 1 cup of ice to the shaker. Secure the lid and shake vigorously for 10–15 seconds, until the outside of the shaker is cold and slightly frosted.

  4. 4

    Strain and serve

Discard the ice from the chilled serving glass if you pre-chilled it. Fill the glass with fresh ice (about 1 cup). Strain the shaken mixture into the glass over the fresh ice.

  5. 5

    Garnish and finish

Garnish with a pineapple wedge or lime wheel on the rim and an optional mint sprig. Give the cocktail a brief stir to integrate and serve immediately.

  6. 6

Adjustments: If you prefer a tarter drink, omit the simple syrup or increase lime to 0.75 oz. For a smoother, fruitier profile, increase pineapple juice by 0.5–1 oz.
