Passion Fruit & Tonka Bean Sorbet

    Make simple syrup

    Combine 1 cup water and 1 cup granulated sugar in a small saucepan. Warm over medium heat, stirring until the sugar is fully dissolved and the syrup is clear. Do not boil hard. Remove from heat.

    Infuse with Tonka

    Grate the Tonka bean very finely (measure about 1/4 tsp). Add the grated Tonka to the warm syrup and let steep for 10–15 minutes off the heat, covered. This releases the warm vanilla-almond notes. Taste carefully — Tonka is potent; 1/4 tsp is sufficient for this quantity.

    Combine passion fruit

    Strain the passion fruit pulp to remove large seeds if you prefer a seedless sorbet. For a textured sorbet, keep the seeds. In a bowl, whisk together 2 cups passion fruit pulp, the cooled Tonka-infused syrup (strain to remove any large Tonka flecks if desired), 2 tablespoons light corn syrup, 2 tablespoons fresh lime juice, and 1/4 teaspoon fine sea salt. Chill the mixture thoroughly in the fridge until cold (at least 1 hour; preferably 2) — cold base yields a smoother result.

    Churn

    Freeze the chilled mixture in an ice cream maker according to manufacturer instructions until it reaches a soft-serve consistency (typically 20–30 minutes). If you do not have an ice cream maker, pour into a shallow metal pan, freeze for 45 minutes, then vigorously whisk or blend to break up ice crystals; repeat every 30–45 minutes until smooth and scoopable (3–4 cycles).

    Harden

    Transfer sorbet to a lidded container, press a piece of parchment onto the surface to prevent ice crystals, and freeze at least 2 hours to firm up before serving. Remove from the freezer 6–10 minutes before scooping so it softens slightly for a clean scoop.

Coconut Meringue (crisp shards)

    Preheat oven & prepare sheet

    Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper and lightly mark desired shard shapes or simple rounds — you can make irregular shards for an elegant look.

    Whip egg whites

    In a clean, grease-free bowl, whisk 3 room-temperature egg whites with 1/4 teaspoon cream of tartar and 1/8 teaspoon fine sea salt until foamy. Gradually add 3/4 cup granulated sugar, a tablespoon at a time, while continuing to whisk to build glossy soft peaks. Once soft peaks form and sugar is dissolved, add 1/4 cup powdered sugar and 1/2 teaspoon vanilla extract and whip to stiff, glossy peaks. The mixture should hold shape and feel smooth between fingers (no grit).

    Fold in coconut

    Gently fold 3/4 cup finely shredded unsweetened coconut into the meringue, keeping as much air as possible. Do not overmix.

    Pipe or spoon and bake

    Spoon or pipe the meringue onto the prepared sheet into shard shapes or rounds about 1/4–1/2 inch thick. Smooth or texture the surface as desired. Bake at 250°F (120°C) for 60–75 minutes until meringues are dry to the touch, pale, and can be lifted cleanly from the parchment. Turn off the oven, crack the door, and let the meringues cool completely in the oven for another hour to dry fully. This yields crisp, airy coconut meringue shards.

    Store

    Store cooled meringue shards in an airtight container at room temperature for up to 3 days to keep crisp. Do not refrigerate (it introduces moisture).

Finishing & Plating

    Whip coconut cream (optional): If using coconut cream as a garnish, scoop the thickened cream portion from a chilled can of coconut milk (about 1/2 cup). Whip briefly with a small whisk to loosen to a spoonable consistency. Do not overwhip.

    Assemble: Scoop passion fruit-tonka sorbet into chilled bowls or spoons. Arrange one or two coconut meringue shards leaning against or atop each scoop for height and texture.

    Garnish: Drizzle or spoon a little fresh passion fruit pulp (about 1–2 teaspoons) over each scoop for bright fresh flavor and seeds if desired. Add a small dollop of whipped coconut cream beside the sorbet, sprinkle with toasted coconut flakes, and place 1–2 micro mint leaves for color.

    Serve promptly: Serve immediately so meringue remains crisp and sorbet is at ideal texture.
