    Prepare cheeses

    Remove cheeses from the refrigerator 20–30 minutes before assembling so they come to room temperature. Cut the cheddar into bite-size cubes. Trim the brie wheel into a wedge (leave 1/3 whole for visual interest) and score the rind in a crosshatch. Slice the manchego into 1/4-inch slices and arrange in a fan. Place the goat cheese log on a small board or in a shallow bowl and drizzle 1 teaspoon honey over the top; gently swirl with a small knife.

    Prepare meats

    Fold prosciutto slices loosely into small ruffles or roll into cigars for height. Fan the soppressata and coppa in overlapping layers. For variety, make 2–3 small piles of different shapes (ropes, cones, loose folds) rather than one big pile.

    Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet, brush lightly with 1/2 tablespoon olive oil and toast 6–8 minutes until golden at the edges. Let cool. Arrange crackers in a separate pile.

    Prepare small bowls

    Place olives in a small bowl and drizzle with 1/2 teaspoon olive oil and a pinch of pepper. Put cornichons in another small bowl. Spoon whole-grain mustard into a tiny bowl or ramekin. Put fig jam in a second ramekin. Halve dried apricots and place with marcona almonds on a small dish. Arrange fresh grapes still on the stem and any fresh figs or berries nearby for color.

    Arrange the tableau plateau

    Select a large wooden board or slate. Start by placing the cheeses spaced out (brie wedge, goat cheese bowl, cheddar cubes cluster, manchego fan) to create anchor points. Place the bowls with olives, mustard and jam near cheeses they pair with. Tuck folded prosciutto and rolled salami between the cheese anchor points. Scatter crackers and toasted baguette slices in two or three piles around the board. Fill gaps with marcona almonds, dried apricots, cornichons, and fresh grapes, letting some grape stems drape over cheese for a natural look. Add small piles of whipped or sliced meats for texture contrast.
