Method

For the baguette

  1. 1

    Warm and slice the baguette

Preheat oven to 350°F (175°C). Place the whole baguette directly on the oven rack or on a baking sheet and warm for 6–8 minutes until the crust is slightly crisp and the crumb is just warmed through. Remove and let rest 1 minute. Using a serrated knife, slice the baguette on the bias into 1/2-inch (1.25 cm) thick slices, or keep halves if serving crosswise.

For the butter

  1. 2

    Soften and season butter

If the butter is not already softened, let it sit at room temperature for 10–15 minutes. Using a small bowl, stir the unsalted butter with a pinch of fine sea salt until smooth and slightly whipped. This makes it easy to spread and brings out flavor.

  2. 3

Taste and adjust salt: taste a small amount and add another pinch if you prefer a more pronounced salty balance with the preserve.

For the house preserve

  1. 4

    Brighten the preserve

If using a jarred or home-made preserve, place it in a small bowl. Stir in the lemon juice and optional lemon zest to brighten the flavor and slightly loosen the texture for easy spreading. If the preserve is very thick, microwave for 10–15 seconds or warm in a small saucepan over low heat until slightly more spreadable; do not boil.

To assemble and serve

  1. 5

    Spread and serve

Spread about 1/2 tablespoon of the seasoned butter onto each baguette slice (or to taste). Dollop or spread approximately 1 teaspoon to 1 tablespoon of the house preserve on top of the butter, depending on slice size and preference. Serve immediately while the baguette is slightly warm so the butter softens and the preserve melds.

  2. 6

Presentation tip: arrange slices on a platter, garnish with a few fresh berries or a sprig of mint if desired. Offer extra butter and preserve on the side.
