Chill liquids
Place the orange juice and sparkling wine in the refrigerator for at least 1 hour before serving so both are thoroughly chilled. Do not chill sparkling wine in the freezer.

If using fresh oranges, juice them and strain to remove large pulp and seeds; measure to get 3 cups of juice. If using store-bought juice, stir and keep chilled.

Pour orange juice into each flute so it fills about one-third of the glass. For 6 servings with 3 cups orange juice, pour 1/2 cup (4 fl oz) per glass.

Slowly top each glass with sparkling wine, pouring down the side of the glass to preserve bubbles, until the glass is nearly full (about two-thirds sparkling wine to one-third juice overall). For each glass this will be about 1 cup (8 fl oz) sparkling wine if using 6-oz flutes; adjust to maintain roughly equal volumes across total batch.

Gently stir once with a bar spoon if you prefer a slightly more integrated drink, but avoid vigorous stirring to keep carbonation.
