    Chill glass

    Place a coupe or Nick & Nora glass in the freezer for at least 5 minutes or fill it with ice water while you prepare the drink to ensure the cocktail stays cold.

    Measure and combine

    Add 2 oz Old Tom gin, 1 oz sweet vermouth, and 0.25 oz maraschino liqueur into a mixing glass.

    Add bitters and ice

    Drop in 2 dashes of orange bitters and 1 dash of Angostura bitters. Fill the mixing glass with enough ice to come just above the liquid level (roughly 1 cup).

    Stir

    Using a bar spoon, stir the mixture for 20–30 seconds (about 20–30 revolutions) until well chilled and slightly diluted. Proper dilution should slightly glaze the outside of the mixing glass and the liquid should be very cold to the touch.

    Strain

    Discard ice or water from the chilled serving glass. Using a Hawthorne (or julep) strainer, strain the cocktail into the chilled coupe or Nick & Nora glass, leaving any small shards of ice behind in the mixing glass.

    Garnish and serve

    Express the oils of a fresh lemon twist over the surface of the drink by holding the twist skin-side down above the glass and giving it a quick snap to release oils. Rub the twist gently around the rim if desired, then drop it into the cocktail. Serve immediately.

    If you used ice water to chill the glass, empty and dry the glass before straining the cocktail into it. Rinse or dry bar tools after use.
