Method
Foie Gras

Remove foie gras from refrigerator 20–30 minutes before cooking to come closer to room temperature; pat dry with paper towel. Portion into 4 equal medallions (about 1.5–2 oz / 40–60 g each).

Season both sides lightly with sea salt and freshly ground black pepper.

Add foie gras medallions and sear 30–45 seconds per side — you want a deep golden crust while keeping a soft interior. Do not overcrowd; sear in batches if needed.

Transfer seared foie gras to a paper towel-lined plate to drain rendered fat. Reserve 1–2 teaspoons of the rendered fat for finishing the pain perdu if desired.
Pain Perdu (Savory French Toast)

Whisk together eggs, whole milk, heavy cream, fine sea salt and sugar in a shallow dish until smooth.

Heat a nonstick or stainless skillet over medium heat and add 1 tablespoon unsalted butter.

Dip each brioche slice into the egg-cream mixture for 5–10 seconds per side—absorb but do not become soggy—let excess drip off.

If desired, brush the warm toast very lightly with 1–2 teaspoons of reserved foie gras fat for extra flavor.
Ruffled Sour Cream & Onion Chips

In a small bowl, combine sour cream, minced chives, onion powder and salt; mix until smooth.

Gently fold in ruffled potato chips just to coat several chips and keep some whole for texture. Reserve: set aside about 12 coated chips for plating, and keep remaining plain chips for additional crunch if desired.

If you prefer crisper garnish, spread coated chips on a tray and chill 10 minutes to firm before plating.
Preserved Quince & Smoked Maple

Thinly slice preserved quince or break membrane into small shards about 1/2-inch long. If using quince paste, warm slightly in microwave (5–10 seconds) to make it pliable for slicing.

In a small bowl, whisk together maple syrup and white balsamic vinegar. If you do not have smoked maple syrup, add 1/8 tsp liquid smoke to taste and whisk to combine.

Reserve 1–2 tablespoons of the maple mixture to spoon over the plated dish at the end; keep remaining for guests to drizzle if desired.
Finishes & Plating

Warm serving plates slightly. Place one slice of pain perdu in the center of each plate (cut slices in half for hors d'oeuvre portions if making smaller bites).

Top each toast with a seared foie gras medallion. Add a small spoonful (about 1 teaspoon) of thinly sliced preserved quince beside or atop the foie gras.

Arrange 3 coated ruffled sour cream & onion chips leaning against the foie gras for texture and visual contrast.

Drizzle 1 teaspoon of the smoked maple mixture over the foie gras and a light thread across the plate. Finish with a few toasted almond slivers scattered around the toast.

Sprinkle a tiny pinch of flaky sea salt and a grind of black pepper over the foie gras. Add a few microgreens if using for color.

Serve immediately while foie gras and toast are warm. Provide extra maple mixture on the side if desired.
