Build and shake
Pour gin, blue curaçao, fresh lemon juice, and simple syrup into a cocktail shaker. Add ice to the shaker (about 3/4 full). If using bitters, add 1 dash. Shake vigorously for 10-12 seconds until the shaker is cold to the touch and the mixture is well chilled.

Strain and top
Fill a large wine glass or a highball glass with fresh ice (use the ice listed under Garnish). Double-strain the shaken mixture into the prepared glass to remove small ice shards. Immediately top with the chilled sparkling wine (about 2 oz) and then the club soda (about 1 oz) to create the spritz effervescence. Gently stir once with a bar spoon (1–2 turns) to combine without flattening the bubbles.

Float a lemon wheel or a twist on the surface. Clap the mint between your palms to release aromatics and tuck the sprig into the drink beside the lemon (if using). Serve with a short straw or a cocktail pick. The final color should be an electric blue with a sparkling top layer.
