Preparation
Remove filets from the refrigerator 30–45 minutes before cooking to bring to near room temperature. Pat dry with paper towels.

Season both sides of each filet generously with kosher salt and freshly ground black pepper (about 1/2 tsp salt and 1/8–1/4 tsp pepper per side depending on thickness).

Transfer filets to a warm plate, tent lightly with foil, and let rest 5–8 minutes while you prepare the Sauce Diane.

Over medium heat, add the minced shallots and sauté 1–2 minutes until translucent and fragrant, scraping up browned bits from the pan with a wooden spoon.

Add the sliced mushrooms and cook 4–5 minutes until they release moisture and begin to brown.

Stir in the minced garlic and cook 30 seconds until fragrant, then add 1 tsp Dijon mustard and 1 tsp Worcestershire sauce, stirring to combine.

Flambé / Deglaze
Remove the pan from the heat briefly. Carefully add the brandy/cognac (60 ml). If you choose to flambé, return pan to the burner, tilt slightly and ignite with a long lighter (keep face and hands back). Let flames burn until they subside, about 10–15 seconds. If not flambéing, simply simmer for 30–45 seconds to reduce slightly and cook off alcohol.

Add the beef stock (120 ml) and bring to a gentle simmer, scraping any browned bits from the bottom. Reduce the liquid by about half, 2–4 minutes.

Lower the heat to medium-low and stir in the heavy cream (120 ml). Simmer gently for 2–3 minutes until the sauce thickens enough to coat the back of a spoon. Do not boil vigorously to avoid splitting the cream.

Taste and season with up to 1 tsp salt and 1/2 tsp freshly ground black pepper. If desired, whisk in an extra tsp Dijon or whole-grain mustard for brightness and texture.

Stir in the chopped parsley and remove from heat.

If a silkier sauce is preferred, strain briefly through a fine sieve into a warm saucepan, pressing on solids to extract flavor, then return to low heat to keep warm.
Plating & Finish

Place each rested filet on warm plates. Spoon a generous ladleful of Sauce Diane over each filet, allowing some sauce to pool on the plate.

Garnish with a parsley sprig and a small handful of microgreens or a tiny side salad if using. Serve immediately.
