Season the chicken: in a small bowl combine kosher salt, black pepper, and smoked paprika. Rub the spice mixture evenly over both sides of the chicken thighs.

Flip and finish: turn the thighs and reduce heat to medium. Cook until the internal temperature reaches 165°F (74°C) and the juices run clear, about 4–6 more minutes depending on thickness. Transfer chicken to a plate and tent with foil to rest 5 minutes.

Add citrus and aromatics: pour in blood orange juice and fresh lime juice, then stir in honey, harissa paste, soy sauce, rice vinegar, and grated ginger. Bring to a gentle simmer and scrape up browned bits from the pan.

Thicken: mix cornstarch with cold water to make a slurry. Slowly whisk the slurry into the simmering sauce and cook 1–2 minutes until sauce thickens and becomes glossy. Taste and adjust seasoning — add a pinch of salt or a little more honey if you prefer sweeter, or more harissa for heat.

Finish the sauce: remove from heat and stir in half of the chopped cilantro and half of the scallions.

Slice the rested chicken thighs across the grain into 1/2-inch strips.

Warm the bibb lettuce leaves briefly (optional): hold over steam or quickly heat in a dry skillet 10 seconds per side to make pliable.

Assemble: place a piece of sliced chicken into each lettuce leaf. Spoon 1–2 tablespoons of the thorned citrus-chili sauce over the chicken. Top with quick-pickled red onion, a sprinkle of toasted sesame seeds, remaining cilantro, and scallions.
