Bring ingredients to temperature

Remove eggs and mascarpone from the refrigerator 10–15 minutes before cooking so they approach room temperature. Finely snip chives and set aside. Measure milk and butter.

Whisk eggs

Crack the 6 eggs into a medium mixing bowl. Add 2 tablespoons whole milk, 3 pinches sea salt, and 1 pinch freshly ground black pepper. Whisk vigorously until yolks and whites are fully combined and the mixture is slightly frothy (about 20–30 seconds).

Incorporate mascarpone

Fold 2 tablespoons mascarpone into the beaten eggs until incorporated but not completely dissolved — small pockets of mascarpone will melt into the eggs during cooking, giving extra creaminess.

Heat the pan

Place a nonstick or heavy-bottomed skillet (8–10 inches) over low to medium-low heat. Add 1 tablespoon unsalted butter and let it melt slowly until it foams and just begins to subside but does not brown. The surface temperature should be gentle — you should not see rapid bubbling.

Start cooking eggs

Pour the egg and mascarpone mixture into the warm skillet. Let it sit undisturbed for about 10–15 seconds so the edges begin to set slightly.

Stir gently

Using a silicone spatula, stir the eggs slowly and continuously with broad sweeping motions from the outside toward the center, allowing soft curds to form. Keep the heat low — if the eggs are cooking too quickly or browning, lift the pan off the heat briefly to cool it, then return it.

Finish to soft curds

When the eggs are mostly set but still glossy and slightly runny (about 2–3 minutes total cooking time depending on heat), remove the pan from the heat. The residual heat will finish cooking them to a custardy texture. Taste and adjust seasoning with a small additional pinch of salt or pepper if desired.

Plating and garnish

Transfer the soft scrambled eggs immediately to warm plates to prevent overcooking in the pan. Dot the top with 1 teaspoon extra butter if using, then sprinkle the 2 tablespoons finely snipped chives evenly over the eggs. Serve right away while creamy and warm.
