Prepare the Ingredients

In a medium pot, combine the diced prickly pear, dried hibiscus flowers, and lavender with water.

Simmer the Mixture

Bring the mixture to a boil over medium heat. Once boiling, reduce heat and let simmer for about 15 minutes, or until the prickly pear is tender.

Strain the Liquid

Remove the pot from heat. Use a fine mesh strainer to strain the liquid into a bowl or jar, discarding the solids.

Add Sugar and Salt

While the liquid is still warm, add sugar and salt, stirring until fully dissolved.

Fermenting Process

Once cooled to room temperature, add vinegar to the mixture. Pour the liquid into a clean fermentation jar, leaving some space at the top.

Seal and Store

Seal the jar with a lid or cover it with a cloth and rubber band to allow gases to escape. Let it sit at room temperature for 3-5 days to ferment, tasting daily until desired tanginess is achieved.

Refrigerate

Once fermented to your liking, transfer the jar to the refrigerator to slow down the fermentation process. Enjoy your New Mexico Ferments as a tangy addition to salads, drinks, or as a condiment!
