Prepare bacon & tortilla (if not already cooked)

Scrambled egg mixture

In a small bowl, crack 2 large eggs and add the 2 tbsp egg whites (or 2 additional egg whites if using separated eggs). Season with 1 tsp salt and 1/4 tsp freshly ground black pepper. Whisk briskly until combined and slightly frothy.

Heat a nonstick skillet over medium-low heat and add 1 tbsp unsalted butter. Allow the butter to melt and foam but not brown.

Pour the egg mixture into the skillet. Let it sit undisturbed for 5–10 seconds, then gently push the eggs from the edges toward the center with a spatula to form large, soft curds. Continue folding and moving the eggs every 10–15 seconds until they are mostly set but still slightly moist — about 1.5–2 minutes total. Remove from heat (carryover will finish cooking) to avoid overcooking.
Assemble the Sunrise Wrap

Place the warmed tortilla on a flat surface. If desired, lightly spray or brush one side with nonstick cooking spray to help heat further during final sear.

Lay 2 strips of cooked bacon over the eggs (place them whole or halved depending on tortilla width).

Fold the sides of the tortilla in toward the center, then roll from the bottom up to form a secure wrap. Tuck the ends under as you roll to keep filling contained.
