Prepare and cook ground beef
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and break it up with a spoon. Cook until mostly browned, about 6–8 minutes. Add 3 tablespoons chili powder blend, 1 teaspoon salt and 1 teaspoon black pepper. Stir and cook 2–3 more minutes until seasoning is fragrant and beef is fully cooked. Reduce heat to low and keep warm.

Season and cook chicken
In a bowl combine chicken strips, 2 tablespoons taco seasoning and 2 tablespoons lime juice. Let sit 10 minutes if time allows. Heat 1 tablespoon vegetable oil in a skillet or griddle over medium-high heat. Add chicken in a single layer and cook 4–6 minutes, turning once, until browned and cooked through (internal temperature 165°F/74°C). Transfer to a tray and tent with foil to keep warm.

Marinate and grill shrimp
In a bowl toss 2 lbs shrimp with 2 tablespoons olive oil, 4 minced garlic cloves, 1 tablespoon lime zest, 1 teaspoon smoked paprika, 1 teaspoon cumin and 1 teaspoon salt. Let sit 5–10 minutes. Heat a grill or large skillet to medium-high and coat with nonstick spray or a little oil. Grill shrimp 1–2 minutes per side until opaque and just cooked through (2–4 minutes total depending on size). Remove and keep warm. Reserve any pan juices to drizzle if desired.

Make frijoles (black/pinto bean mix)
Heat 1 tablespoon olive oil in a medium pot over medium heat. Add 1 small diced onion and sauté until translucent, 4–5 minutes. Add 2 minced garlic cloves, 1 teaspoon ground cumin and 1 teaspoon dried oregano; cook 1 minute until fragrant. Add 4 cups drained black beans and 4 cups drained pinto beans plus 1 cup broth. Gently mash about one-third of the beans with a potato masher or the back of a spoon to create a creamy texture while leaving some whole beans for body. Simmer 10–12 minutes, stirring occasionally. Season with salt and pepper to taste. Keep warm; if too thick, thin with additional broth or water to reach desired consistency.
Pineapple–Mango Salsa

Combine 2 cups diced pineapple, 2 cups diced mango, 1 diced red bell pepper, 1 very small diced red onion, 1 cup chopped cilantro and 1 minced seeded jalapeño in a bowl. Add 3 tablespoons lime juice, 1 teaspoon salt and 1 teaspoon honey. Stir gently to combine. Taste and adjust lime or salt as needed. Refrigerate at least 15 minutes to let flavors meld. Keep chilled until service.

Warm corn and flour tortillas shortly before service. Stack tortillas and cover with a clean, damp kitchen towel. To finish on a griddle or skillet: heat over medium, brush very lightly with oil or spray, warm each side 20–30 seconds until pliable and slightly blistered. Keep wrapped in towel or a tortilla warmer to stay soft. Estimate 2 tortillas per person (adjust as needed).
Toppings & garnishes

Arrange toppings in serving bowls: shredded romaine, shredded cheddar, queso fresco, cilantro leaves, lime wedges, pickled red onions, sliced radishes, sour cream, salsa verde and hot sauce. Place bowls near proteins and tortillas for an easy assembly line. Provide serving spoons and tongs.
Service & final assembly

Set up a taco bar station: tortillas (corn & flour) wrapped and warm, proteins in serving dishes (beef, chicken, grilled shrimp), frijoles in a warm pot, pineapple–mango salsa chilled, and all toppings arranged. Label each item. For each taco: warm a tortilla, add 1–2 tablespoons frijoles, 2–3 tablespoons of chosen protein (or 4–5 shrimp halves), top with salsa, shredded lettuce, cheese or queso, a squeeze of lime and any other desired garnishes. Replenish items as needed.
