Brewed Coffee

Measure coffee
Measure 1 cup (approx. 8 oz by volume) of coarsely ground coffee. This quantity yields a strong concentrate suitable for producing 96 oz finished coffee when brewed with 96 oz of water using a drip or urn method. Adjust strength by adding or reducing grounds by 1–2 tablespoons if you prefer lighter coffee.

Prepare equipment
Ensure your commercial coffee urn or large drip brewer is clean. Place a #8 (or appropriate size) paper filter in the urn basket if required by the brewer.

Heat water
Heat 96 oz of water to between 195–205°F (90–96°C). If using a coffee urn with an integrated water heater, fill the urn with cold water to the 96 oz mark and allow the machine to heat to proper brewing temperature.

Add grounds and brew
Add the measured ground coffee to the filter basket. Slowly pour the heated water over the grounds if using a manual pour-over for large batches, or start the commercial brewer/urn. Brew until all water has passed through the grounds. For an urn, allow the full brew cycle to complete (usually 12–20 minutes depending on equipment).

Check volume and temperature
Confirm you have approximately 96 oz of brewed coffee. Keep the coffee warm at 165–185°F (74–85°C) in the urn’s insulated chamber or on a hot plate for serving. Avoid boiling as it will degrade flavor.

Arrange the granulated sugar (in a bowl with a spoon or individual packets), sweetener packets, liquid creamer, and half-and-half on a serving table beside the coffee urn so guests can customize their drinks. Keep dairy items refrigerated until shortly before service; if storing on the table for more than 30 minutes, place them over ice or in a small cooler.

Provide simple guidance signage (optional): Suggested amounts—1–2 tsp sugar per cup; 1–2 tbsp creamer or half-and-half per cup—so guests can gauge portions.
Serving Supplies

Place disposable cups, lids, stirrers, and napkins next to the condiments. Ensure there are at least 24 cups for a 96 oz batch if you plan to serve 8–12 oz portions; otherwise adjust number of cups served accordingly.

When serving, open the urn spigot and test one cup to ensure proper temperature and flavor. Refill the urn as needed for extended service; keep a small sign indicating refill times or when the batch was brewed.
