Prep the Wings
Rinse the chicken wings under cold water and pat dry with paper towels. Place them in a large bowl.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 375°F (190°C).
Sauce Making

Prepare the Thai Chili Sauce
In a mixing bowl, combine Thai chili paste, honey, soy sauce, and lime juice. Mix well and set aside.

Prepare the Old Bay Seasoning
Measure out the Old Bay seasoning for later use.

Fry the Wings
Carefully place the chicken wings in the hot oil in batches, making sure not to overcrowd the pot. Fry for about 8-10 minutes or until golden brown and crispy. Remove and drain on paper towels.

Coat the Wings
Depending on your flavor preference, toss the fried wings in the Thai chili sauce, Old Bay seasoning, Lava sauce, or Buffalo sauce until evenly coated.
Serving

Plate the Wings
Arrange the coated wings on a serving platter.

Serve with celery sticks and either ranch or blue cheese dressing on the side for dipping.
