Method
Cooking Pasta
- 1
Boil the Pasta
In a large pot, bring salted water to a boil. Add 8 cups of penne pasta and cook according to package instructions until al dente, approximately 10-12 minutes. Stir occasionally to prevent sticking.
- 2
Drain and Set Aside
Once cooked, drain the pasta in a colander and set aside. Do not rinse, as you want to keep the starch on the pasta for the sauce.
Sautéing Shrimp and Making Sauce
- 3
Sauté Shrimp
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 pound of peeled and deveined shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque.
- 4
Add Garlic
Once the shrimp are cooked, add 4 minced garlic cloves to the skillet and sauté for an additional minute until fragrant.
- 5
Prepare the Cream Sauce
Pour in 1 cup of heavy cream and stir well. Add 2 tablespoons of lemon juice, 1 teaspoon of salt, and 1 teaspoon of black pepper. Bring the mixture to a gentle simmer, allowing it to thicken slightly, about 3-5 minutes.
Combining and Serving
- 6
Combine Pasta and Sauce
Add the drained penne pasta to the skillet with the shrimp and cream sauce. Toss gently to combine everything evenly.
- 7
Garnish
Sprinkle 1 tablespoon of chopped parsley over the top for garnish.
- 8
Serve
Serve immediately while hot. Enjoy your shrimp pasta with a wedge of lemon on the side, if desired.
