Preparing the Garlic Mashed Potatoes

Cook the Garlic
While the potatoes are cooking, peel the garlic cloves and place them in a small saucepan. Cover with water and bring to a boil. Reduce heat and simmer for 5 minutes. Drain and set aside.

Mash the Potatoes
Once the potatoes are cooked, drain them and return them to the pot. Add the cooked garlic, butter, and heavy cream. Mash until smooth and creamy. Season with salt and black pepper to taste.

Season the Steak
Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels. Rub both sides with olive oil, then season generously with salt and black pepper.

Cook the Steak
Heat a cast-iron skillet or grill over high heat until very hot. Place the steaks in the skillet and sear for 4-5 minutes on one side without moving them. Flip the steaks and add the rosemary sprig if using. Cook for an additional 4-5 minutes for medium-rare (adjust time for desired doneness).

Rest the Steak
Remove the steaks from the skillet and place them on a cutting board. Cover loosely with foil and let them rest for 5-10 minutes before slicing.
