Preparation
1. Juicing the Pineapple
Start by preparing the fresh pineapple. Cut the pineapple into quarters, remove the skin and core, and chop the flesh into smaller pieces. Using a juicer, extract the juice from the chopped pineapple until you have about 4 oz of fresh juice.
2. Mixing the Martini
In a cocktail shaker, combine 2 oz of sugar cane vodka with 2 oz of freshly juiced pineapple. Add ice to the shaker for chilling.
3. Shaking the Cocktail
Secure the lid on the cocktail shaker and shake vigorously for about 15-20 seconds to mix the ingredients well and chill the mixture.
4. Straining into Glass
Using a cocktail strainer, pour the mixture into a chilled martini glass.
5. Garnishing
Garnish the drink with a slice of pineapple on the rim of the glass and add a couple of mint leaves for an aromatic finish.
