Grilled Rustico Bread

Method

Prepare the Mussels

    Cleaning Mussels

    Rinse the mussels under cold water to remove any debris or sand. Discard any mussels that are open and do not close when tapped.

    Sauté Vegetables

    In a large pot, melt 2 tablespoons of butter over medium heat. Add the diced onion and fennel, and sauté until softened, about 5 minutes.

    Steam the Mussels

    Pour in the white wine and lemon juice, and bring to a simmer. Add the cleaned mussels, cover the pot, and steam for about 5-7 minutes, or until all the mussels have opened.

    Finish the Mussels

    Once the mussels are cooked, remove them from heat. Stir in the remaining 2 tablespoons of butter, chopped cilantro, salt, and black pepper to taste.

Prepare the Grilled Rustico Bread

    Preheat the Grill

    Preheat a grill or grill pan over medium heat.

    Prepare the Bread

    Slice the rustico bread into thick slices. Brush both sides with olive oil.

    Grill the Bread

    Grill the bread slices for about 2-3 minutes on each side, or until they are golden and crispy.
