Method

Preparation of Salmon

  1. 1

    Marinate the Salmon

In a small bowl, mix together olive oil, lemon juice, garlic powder, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes.

  2. 2

    Preheat the Grill

While the salmon is marinating, preheat your grill to medium-high heat.

Preparation of Vegetables

  1. 3

    Prepare the Vegetables

Wash and chop the zucchini, bell peppers, and asparagus into bite-sized pieces. In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper.

  2. 4

    Grill the Vegetables

Place the seasoned vegetables on the grill and cook for about 8-10 minutes, turning occasionally until they are tender and slightly charred.

Grilling the Salmon

  1. 5

    Grill the Salmon

Once the grill is hot, place the marinated salmon fillets skin-side down on the grill. Cook for about 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Serving

  1. 6

    Plate the Dish

Remove the salmon and vegetables from the grill. Serve the grilled salmon alongside the grilled seasonal vegetables. Optionally, garnish with lemon wedges.
