Method

Preparation of Ingredients

  1. 1

    Prepare the Oysters

Rinse the oysters under cold water and pat them dry with paper towels. Set aside.

  2. 2

    Prepare the Cabbage and Cilantro

Finely shred the cabbage and chop the fresh cilantro. Mix them together in a bowl and set aside.

  3. 3

    Make the Sauce

In a small bowl, combine mayonnaise, Sriracha sauce, garlic powder, and lime juice. Mix well and set aside.

Batter Preparation

  1. 4

    Mix the Dry Ingredients

In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

  2. 5

    Add Cold Water

Gradually add the cold water to the dry ingredients, stirring until the batter is smooth and free of lumps.

Frying the Oysters

  1. 6

    Heat the Oil

In a large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 7

    Coat and Fry the Oysters

Dip each oyster into the batter, allowing excess to drip off. Carefully place the battered oysters into the hot oil. Fry for 2-3 minutes per side until golden brown and crispy.

  3. 8

    Drain the Oysters

Once fried, remove the oysters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Assembling the Tacos

  1. 9

    Warm the Tortillas

In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

  2. 10

    Build the Tacos

To each tortilla, add a few fried oysters, a generous amount of the cabbage-cilantro mix, and drizzle the Sriracha mayo sauce on top.

  3. 11

    Garnish and Serve

Squeeze fresh lime juice over the assembled tacos and serve immediately.
