Preparing the Remoulade

    Make the Remoulade

    In a mixing bowl, combine mayonnaise, Dijon mustard, hot sauce, minced garlic, chopped capers, and lemon juice. Mix well until all ingredients are incorporated. Set aside in the refrigerator to chill.

Preparing the Oysters

    Clean the Oysters

    Rinse the fresh Atlantic oysters under cold water to remove any grit or sand. Pat them dry with a paper towel.

    Prepare the Breading Station

    In three separate bowls, place the all-purpose flour mixed with salt and black pepper, the beaten eggs mixed with milk, and the cornmeal.

    Bread the Oysters

    First, dip each oyster in the flour mixture, then into the egg mixture, and finally coat with cornmeal. Make sure each oyster is fully coated.

Cooking the Oysters

    Fry the Oysters

    In a deep skillet, heat oil over medium-high heat. Once hot, carefully add the breaded oysters in batches, frying for about 2-3 minutes on each side, or until golden brown. Remove and drain on paper towels.

    In a separate skillet, cook the bacon until crispy over medium heat. Remove from skillet and place on paper towels to drain.

Assembling the Sandwich

    Prepare the Sandwich

    Slice the tomato and the brioche buns. Spread a generous amount of remoulade on the bottom half of each bun. Layer with crispy lettuce, fried oysters, bacon, and tomato slices. Top with the other half of the bun.
