Preparing the Fish

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the beer until the mixture is smooth and well combined.

Heat the Oil
In a deep frying pan, heat the oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Cod
Dip each cod fillet into the batter, allowing excess to drip off, then carefully place it in the hot oil. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

In a large bowl, combine the shredded cabbage, grated carrot, chipotle mayonnaise, and lime juice. Toss together until the vegetables are well coated.

Add salt and pepper to taste, adjusting as necessary. Set aside to let the flavors meld.
Assembling the Sandwich

Prepare the Buns
Slice the brioche buns in half and lightly toast them if desired.

Layer the Ingredients
On the bottom half of each bun, place a fried cod fillet. Top with a slice of Swiss cheese and a generous amount of chipotle coleslaw. Drizzle tartar sauce on top, then place the top half of the bun.
